Directions

  • Cook Shells: Boil pasta shells according to package directions. Drain and let cool slightly.
  • Mix vegan ricotta, spinach, ½ cup vegan mozzarella, garlic powder, onion powder, salt, and pepper.
  • Stuff Shells: Fill each shell with the vegan mixture.
  • Assemble: Spread 1 cup marinara sauce in a baking dish. Place stuffed shells in the dish. Top with remaining marinara and vegan mozzarella.
  • Bake: Cover with foil and bake at 375°F for 20 minutes. Uncover and bake an additional 10 minutes until bubbly and golden.
  • Serve: Let cool slightly and serve hot.
