Ingredients
1 ½ cups vegan ricotta (store-bought or homemade)
1 cup spinach (chopped, optional)
1 cup vegan mozzarella (shredded)
1 ½ cups marinara sauce
1 tsp garlic powder
1 tsp onion powder
Salt and pepper to taste
Directions
- Cook Shells: Boil pasta shells according to package directions. Drain and let cool slightly.
- Mix vegan ricotta, spinach, ½ cup vegan mozzarella, garlic powder, onion powder, salt, and pepper.
- Stuff Shells: Fill each shell with the vegan mixture.
- Assemble: Spread 1 cup marinara sauce in a baking dish. Place stuffed shells in the dish. Top with remaining marinara and vegan mozzarella.
- Bake: Cover with foil and bake at 375°F for 20 minutes. Uncover and bake an additional 10 minutes until bubbly and golden.
- Serve: Let cool slightly and serve hot.
