Ingredients
1 can young green jackfruit (in water or brine, drained & rinsed)
1/2 onion, thinly sliced
1/2 cup BBQ sauce (your favorite)
1 tablespoon olive oil
Salt & pepper to taste
4–6 small corn or flour tortillas
1/2 cup coleslaw mix or shredded cabbage
Optional toppings: sliced avocado, jalapeños, lime wedges
Directions
- Prep Jackfruit: Drain, rinse, and shred jackfruit with fingers or fork. Remove seeds/core pieces if desired.
- Sauté: Cook onion in olive oil until soft. Add jackfruit, season with salt & pepper, and cook 5 minutes.
- BBQ Sauce: Stir in BBQ sauce, reduce heat, and simmer 10–15 minutes until thickened.
- Assemble Tacos: Warm tortillas, fill with jackfruit, top with slaw and optional toppings. Serve with lime wedges!
