Ingredients
4 medium russet potatoes
1 tablespoon olive oil
½ cup shredded cheddar cheese
4 slices cooked bacon, crumbled
¼ cup sour cream (for topping)
Salt and black pepper (to taste)
Chives or green onions (optional)
Directions
- Prep Potatoes: Bake or air fry potatoes at 400°F for 45–60 minutes until tender. Cool slightly, then cut in half and scoop out most of the flesh, leaving a thin layer.
- Crisp Skins: Brush skins with olive oil, season with salt and pepper. Air fry or bake at 400°F for 5–7 minutes until crispy.
- Add Cheese & Bacon: Fill skins with cheese and bacon. Return to air fryer or oven for 5–7 more minutes until cheese is melted and bubbly.
- Serve: Top with sour cream and optional chives. Serve hot!
