Ingredients
1 lb boneless skinless chicken thighs, cut into bite-sized chunks
6–8 fresh jalapeños, sliced in half lengthwise and seeds removed
4 oz cream cheese, softened
1 cup shredded cheddar cheese
12 strips of bacon, cut in half
Bamboo skewers to secure
Salt and pepper, to taste
Optional: garlic powder or onion powder for extra flavor
Directions
- Preheat oven to 400°F (or air fryer to 375°F if using).
- In a small bowl, mix softened cream cheese and shredded cheddar until combined.
- Fill each jalapeño half with the cheese mixture.
- Top each filled jalapeño with a chunk of chicken, then wrap with half a strip of bacon.
- Secure each bite with a bamboo skewer.
- Place on a lined baking sheet or in your air fryer basket.
- Bake for 25–30 minutes (or air fry for 15–18 minutes), until bacon is crispy and chicken is cooked through.
- Let cool for 5 minutes before serving.
