Ingredients
1 tablespoon olive oil
1 cup diced carrots
1 cup diced celery
1 cup diced onion
2 cloves garlic (minced)
1 cup dry lentils (rinsed)
1 can diced tomatoes
4 cups vegetable broth
1 teaspoon smoked paprika
1 teaspoon ground cumin
Salt and pepper to taste
Directions
- Sauté Veggies: In a skillet, heat olive oil. Add carrots, celery, onion, and garlic. Cook 5–7 mins until soft.
- Simmer Soup: Add lentils, tomatoes, broth, and spices. Simmer 25–30 minutes until lentils are tender.
- Season & Serve: Add salt and pepper to taste. Serve hot.
