Ingredients

  • 8 oz pasta of choice (twisted or fettuccine)

  • 1 tablespoon olive oil

  • 2 cups mushrooms (sliced)

  • 2 cloves garlic (minced)

  • ½ cup coconut milk or other plant-based milk

  • 2 tablespoons nutritional yeast (if available)

  • Salt and pepper to taste

Directions

  • Cook Pasta: Boil pasta according to package directions. Drain and set aside.
  • Sauté Mushrooms: In a skillet, heat olive oil, add mushrooms and garlic, cook 5–7 mins until soft.
  • Make Sauce: Add coconut milk and nutritional yeast. Simmer until thickened. Season with salt and pepper.
  • Combine: Toss pasta in sauce, garnish with herbs, and serve hot.
