Ingredients
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 tablespoon curry powder
1 teaspoon ground cumin
1/2 teaspoon turmeric
1 (15 oz) can diced tomatoes
1 (15 oz) can chickpeas, drained and rinsed
1 cup coconut milk
2 cups fresh spinach
Salt and black pepper, to taste
Cooked white or brown rice (for serving)
Lime wedges (optional)
Directions
- SautΓ© onion and garlic in olive oil until soft. Add curry powder, cumin, turmeric β cook for 1 minute.
- Add diced tomatoes, chickpeas, coconut milk. Simmer for 10 minutes.
- Stir in spinach until wilted. Season with salt and pepper.
- Serve over rice with lime wedges on the side.
