A refreshing, healthy wrap filled with creamy avocado, protein-packed chickpeas, and fresh veggies. This Chickpea Avocado Salad Wrap is vegan, easy to make, and perfect for a quick lunch or a light dinner.

Ingredients

  • For the Chickpea Salad
  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 ripe avocado

  • 1/4 cup diced red onion

  • 1/4 cup diced cucumber

  • 1/4 cup diced cherry tomatoes

  • 1 tbsp lemon juice

  • 1 tbsp olive oil

  • 1/2 tsp garlic powder

  • 1/2 tsp salt (or to taste)

  • 1/4 tsp black pepper

  • For the Wrap
  • 2 large whole wheat tortillas (or wraps of choice)

  • 1/2 cup shredded lettuce

  • 1/4 cup shredded carrots

  • 2 tbsp hummus (optional, for extra creaminess)

Directions

  • Mash the Chickpeas & Avocado
    In a large bowl, mash the chickpeas and avocado together with a fork until combined but still slightly chunky.
  • Mix the Salad
    Stir in the diced red onion, cucumber, cherry tomatoes, lemon juice, olive oil, garlic powder, salt, and black pepper.
    Mix until well combined and creamy.
  • Assemble the Wrap
    Spread a thin layer of hummus on each tortilla (optional).
    Add shredded lettuce and carrots, then spoon the chickpea avocado mixture on top.
  • Wrap & Serve
    Fold in the sides of the tortilla and roll tightly into a wrap.
    Slice in half and enjoy immediately, or wrap in foil for a grab-and-go meal!
