Ingredients
- For the Chickpea Salad
1 can (15 oz) chickpeas, drained and rinsed
1 ripe avocado
1/4 cup diced red onion
1/4 cup diced cucumber
1/4 cup diced cherry tomatoes
1 tbsp lemon juice
1 tbsp olive oil
1/2 tsp garlic powder
1/2 tsp salt (or to taste)
1/4 tsp black pepper
- For the Wrap
2 large whole wheat tortillas (or wraps of choice)
1/2 cup shredded lettuce
1/4 cup shredded carrots
2 tbsp hummus (optional, for extra creaminess)
Directions
- Mash the Chickpeas & Avocado
In a large bowl, mash the chickpeas and avocado together with a fork until combined but still slightly chunky. - Mix the Salad
Stir in the diced red onion, cucumber, cherry tomatoes, lemon juice, olive oil, garlic powder, salt, and black pepper.
Mix until well combined and creamy. - Assemble the Wrap
Spread a thin layer of hummus on each tortilla (optional).
Add shredded lettuce and carrots, then spoon the chickpea avocado mixture on top. - Wrap & Serve
Fold in the sides of the tortilla and roll tightly into a wrap.
Slice in half and enjoy immediately, or wrap in foil for a grab-and-go meal!
