Ingredients
2 medium zucchinis, cut into fry-sized strips
½ cup panko breadcrumbs
¼ cup grated parmesan cheese
½ tsp garlic powder
½ tsp paprika
½ tsp Italian seasoning
½ tsp salt
¼ tsp black pepper
1 large egg, beaten
½ cup flour (for coating)
Olive oil spray
Garlic aioli or marinara sauce (for dipping)
Directions
- Oven Method:
Preheat oven to 425°F and line a baking sheet with parchment paper.
Set up breading station: Place flour in one bowl.
Beat the egg in another bowl.
Mix panko, parmesan, garlic powder, paprika, Italian seasoning, salt, and pepper in a third bowl.
Coat zucchini fries: Dredge each zucchini strip in flour, dip in egg, then coat with breadcrumb mixture.
Bake: Place on a baking sheet, spray lightly with olive oil, and bake for 20-25 minutes, flipping halfway, until crispy and golden. - Air Fryer Method:
Preheat air fryer to 400°F.
Follow the same breading steps, then place zucchini fries in the air fryer basket in a single layer.
Air fry for 10-12 minutes, shaking halfway, until crispy and golden brown.
Notes
- Serve hot with garlic aioli or marinara sauce for dipping!
For extra crunch, double-coat by repeating the egg and breadcrumb step.
