  • Preheat & Prep: Preheat oven to 400°F (200°C). Rinse and dry chickpeas thoroughly with a paper towel.
  • Roast Plain First: Spread chickpeas on a baking sheet and bake for 15 minutes to dry them out.
  • Season: Remove chickpeas from the oven and toss with olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Roast Again: Return to the oven and bake for another 15-20 minutes until crispy, shaking the pan halfway through.
  • Add Parmesan & Serve: Sprinkle chickpeas with grated parmesan and red pepper flakes (if using) while they’re still hot. Let cool slightly before enjoying!

Notes

  • For extra crispiness, leave chickpeas in the oven after turning it off for another 5-10 minutes.
    Want them cheesier? Add more parmesan or nutritional yeast for a bolder flavor.
    Storage: Keep in an airtight container at room temperature for up to a week.
