  • Roast Plain First: Spread chickpeas on a baking sheet in a single layer and bake for 15 minutes to dry them out.
  • Coat with Flavor: In a bowl, toss chickpeas with olive oil, cinnamon, coconut sugar, vanilla extract, and salt.
  • Roast Again: Return to the oven and bake for another 15-20 minutes, shaking the pan halfway through, until crispy.
  • Cool & Enjoy: Let them cool completely (they crisp up more as they cool). Enjoy as a snack or topping!
