Ingredients
1 can (15 oz) chickpeas, drained & rinsed
1 tbsp olive oil (or melted coconut oil)
2 tbsp coconut sugar (or brown sugar)
1 tsp cinnamon
½ tsp vanilla extract
¼ tsp salt
Directions
- Preheat & Prep: Preheat oven to 375°F (190°C). Rinse and dry chickpeas thoroughly with a paper towel.
- Roast Plain First: Spread chickpeas on a baking sheet in a single layer and bake for 15 minutes to dry them out.
- Coat with Flavor: In a bowl, toss chickpeas with olive oil, cinnamon, coconut sugar, vanilla extract, and salt.
- Roast Again: Return to the oven and bake for another 15-20 minutes, shaking the pan halfway through, until crispy.
- Cool & Enjoy: Let them cool completely (they crisp up more as they cool). Enjoy as a snack or topping!
