Ingredients
- For the Base
3/4 cup oat flour
1/2 cup peanut butter (or almond butter)
1/3 cup honey or maple syrup
1 scoop (30g) vanilla protein powder
1 tsp vanilla extract
1/4 tsp salt
- For the Chocolate Topping
1/2 cup dark chocolate chips
1 tbsp coconut oil
Directions
- Mix the Base Ingredients
In a large bowl, mix the peanut butter, honey (or maple syrup), vanilla extract, and salt until smooth.
Stir in the oat flour and protein powder, mixing until a thick dough forms. - Press into a Pan
Line an 8×8-inch pan with parchment paper.
Press the mixture evenly into the pan, smoothing the top with a spatula. - Melt the Chocolate
In a microwave-safe bowl, combine the chocolate chips and coconut oil.
Microwave in 20-second intervals, stirring between each, until smooth. - Add the Chocolate Topping
Pour the melted chocolate over the protein bar base, spreading it evenly.
Refrigerate for at least 30 minutes until firm. - Slice & Enjoy
Once set, remove from the pan and cut into bars.
Store in the fridge for up to a week or freeze for longer storage.
