Ingredients
1 lb boneless skinless chicken thighs, cut into bite-sized pieces
2 tbsp soy sauce
2 tbsp low sodium soy sauce
1/4 cup honey
2 tbsp apple cider vinegar
1 tbsp corn starch mixed with 2 tbsp water
1 tbsp olive oil
2 tsp fresh garlic (cloves), minced
1 tsp fresh ginger, grated
2 cups cooked white rice
Directions
- Make the Sauce:
In a bowl, mix soy sauce, honey, vinegar, garlic, and ginger. Whisk until smooth. - Cook the Chicken:
Heat olive oil in a skillet over medium-high. Add chicken and cook until browned and cooked through (about 6β8 minutes). - Add Sauce & Thicken:
Pour the sauce into the skillet. Bring to a simmer. Stir in the cornstarch slurry and cook for 1β2 minutes until thickened. - Assemble Bowls:
Serve chicken over white rice. Top with steamed veggies if desired. Spoon extra sauce over everything and enjoy.
