Ingredients
1 lb pork loin or pork shoulder, cut into bite-sized pieces
1/4 cup corn starch
Salt and pepper to taste
2 tbsp olive oil for frying
1/2 cup ketchup
1/3 cup apple cider vinegar
1/4 cup brown sugar
2 tsp soy sauce
1 tbsp corn starch + 2 tbsp water (slurry)
1 cup pineapple chunks
1 sliced red bell pepper
1/2 sliced red onion
Optional: white rice for serving
Directions
- Prep and Sear the Pork:
Toss pork with cornstarch, salt, and pepper. Heat oil in a large skillet and cook pork in batches until golden and crispy. Remove and set aside. - Make the Sauce:
In a bowl, mix ketchup, vinegar, brown sugar, and soy sauce. Stir until smooth. - Cook the Veggies:
In the same pan, sautΓ© bell pepper and red onion for 2β3 minutes until slightly softened. Add pineapple chunks and sauce. - Thicken and Combine:
Stir in cornstarch slurry. Cook until sauce thickens, then add pork back to the pan. Toss to coat. - Serve:
Plate over rice if desired. Garnish with green onion or sesame seeds.
