Ingredients
1 lb boneless skinless chicken breasts, thinly sliced
1 tbsp olive oil
1 cup red bell pepper, sliced
1/2 cup sliced carrots
1/2 cup sliced celery
1 cup fresh spinach
3 tsp fresh garlic (cloves), minced
1 tsp fresh ginger, grated
1/4 cup low sodium soy sauce
1 tbsp olive oil spray (for veggies if roasting)
1 tsp cayenne or to taste
Directions
- Cook the Chicken:
Heat olive oil in a skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through. Remove and set aside. - Sauté the Veggies:
In the same pan, add garlic, ginger, bell pepper, carrots, and celery. Stir-fry for 3–4 minutes until crisp-tender. - Make it Spicy:
Return chicken to the pan. Add soy sauce and cayenne. Toss everything together and cook 1–2 more minutes. - Add Spinach & Serve:
Stir in spinach just before serving and let it wilt. Serve hot over rice or noodles if desired.
