  • Cook the Chicken:
    Heat olive oil in a skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through. Remove and set aside.
  • Sauté the Veggies:
    In the same pan, add garlic, ginger, bell pepper, carrots, and celery. Stir-fry for 3–4 minutes until crisp-tender.
  • Make it Spicy:
    Return chicken to the pan. Add soy sauce and cayenne. Toss everything together and cook 1–2 more minutes.
  • Add Spinach & Serve:
    Stir in spinach just before serving and let it wilt. Serve hot over rice or noodles if desired.
