Ingredients
2 tbsp olive oil
3 tbsp unsalted butter
4 cloves garlic, minced
1/2 tsp red pepper flakes (optional, for heat)
1/2 tsp salt
1/4 tsp black pepper
1/4 cup dry white wine (or chicken broth for non-alcoholic option)
Juice of 1 lemon
1 tbsp fresh parsley, chopped
2 cups zucchini noodles (for low-carb) or cooked linguine
1/4 cup grated Parmesan cheese
Directions
- Sear the Shrimp
Pat shrimp dry with paper towels and season with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat.
Add shrimp in a single layer and sear for 1-2 minutes per side until lightly golden and opaque.
Remove shrimp from skillet and set aside. - Make the Garlic Butter Sauce
Reduce heat to medium and melt butter in the same pan.
Add minced garlic and cook for 30 seconds until fragrant.
Stir in red pepper flakes, white wine (or chicken broth), and lemon juice. Simmer for 2-3 minutes to reduce slightly.
Return shrimp to the pan and toss in the sauce for 1 minute.
Remove from heat and sprinkle with chopped parsley. - Serve & Enjoy
Serve over zucchini noodles for a low-carb meal or toss with cooked linguine for a classic shrimp scampi.
Garnish with grated Parmesan cheese and extra lemon wedges.
