Ingredients
2 large chicken breasts (butterflied or pounded thin)
Β½ cup shredded mozzarella cheese
12 slices pepperoni (plus extra for topping)
ΒΌ cup marinara sauce (plus extra for dipping)
1 tablespoon olive oil
Β½ teaspoon Italian seasoning
Salt and black pepper (to taste)
Directions
- Prep Chicken: Preheat oven to 375Β°F. Butterfly or pound chicken breasts to an even thickness.
- Assemble Filling: Spread a tablespoon of marinara inside each chicken breast. Add mozzarella and pepperoni slices, then fold or roll up the chicken.
- Sear: Heat olive oil in a skillet over medium heat. Sear chicken for 2β3 minutes per side until golden.
- Bake: Transfer to baking dish. Top with extra cheese, pepperoni, and Italian seasoning. Bake for 20β25 minutes, or until cooked through.
