Ingredients
12 Hatch red chili pods β mild β’ medium-hot β’ hot
3Β½ cups water
1Β½ tbsp chicken base
2 whole fresh garlic cloves
2 tsp salt
2 tbsp olive oil
2 tbsp all-purpose flour
1 tsp oregano (crushed)
Optional: flour tortillas for dipping
Directions
- Prep Chiles: Rinse chili pods, then remove stems and seeds.
- Simmer Chiles: In a saucepan, combine water and chicken base, then add chili pods. Bring to a boil, reduce heat, and simmer for ~20 minutes until pods are soft and pulpy.
- Blend: Transfer pods to a blender with garlic, oregano, salt, and about half the cooking liquid. Blend until smooth and paste-like. (Use a standard blender or an immersion blender.)
- Make Roux: In a large skillet, heat olive oil over medium. Add flour and stir constantly for 1β2 minutes to lightly brown.
- Combine & Simmer: Remove from heat and slowly whisk in blended chili mixture until smooth. Add more of the reserved cooking liquid until you reach a thick, gravy-like consistency. Return to heat and simmer for 10 minutes, stirring often.
- Serve or Store: Use immediately to smother burritos or enchiladas, or cool and refrigerate/freeze for later.
