Ingredients
1.5 lbs boneless skinless chicken thighs
3 tablespoons Dijon mustard
1 tablespoon whole grain mustard (optional, for texture)
1 tablespoon olive oil
1 tablespoon apple cider vinegar
2 cloves fresh garlic, minced
½ teaspoon paprika
Salt & black pepper, to taste
Fresh parsley or green onions (optional for garnish)
Directions
- Preheat & Prep: Preheat oven to 400°F (if finishing in oven). Pat chicken thighs dry with paper towels and season with salt, pepper, and paprika.
- Make the Sauce: In a small bowl, mix together honey, Dijon mustard, whole grain mustard (if using), apple cider vinegar, and minced garlic.
- Sear Chicken: Heat olive oil in a cast iron skillet over medium heat. Add chicken thighs and sear for 3–4 minutes per side until lightly browned.
- Add Sauce & Bake: Pour sauce over chicken. Transfer skillet to oven and bake for 15–20 minutes, or simmer covered on stovetop for 10–15 minutes, until chicken reaches 165°F.
- Serve: Spoon extra sauce over chicken and garnish with chopped parsley or green onions if desired.
