Ingredients
2 medium zucchini (halved and scooped)
2 tablespoons butter (melted)
1 garlic clove, minced
2 tablespoons grated parmesan
1 teaspoon Italian seasoning
Salt and black pepper (to taste)
Directions
- Prep Zucchini: Preheat oven to 400°F. Cut zucchini in half lengthwise and scoop out centers to create “boats.”
- Make Garlic Butter: Mix melted butter with minced garlic and Italian seasoning. Brush inside of zucchini with mixture.
