Ingredients
1 tbsp olive oil
2 tbsp butter
3 tsp fresh garlic (cloves), minced
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup sun-dried tomatoes (in oil, drained)
1 cup fresh spinach
Salt and pepper to taste
Optional: red pepper flakes for a kick
Directions
- Sear the Chicken:
Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken 4β5 minutes per side until golden and cooked through. Remove and set aside. - Make the Sauce:
In the same pan, reduce heat to medium. Add butter and garlic, cooking for 1 minute. Stir in heavy cream and Parmesan until smooth. - Add Tomatoes and Spinach:
Add sun-dried tomatoes and spinach. Simmer 2β3 minutes until spinach wilts and sauce thickens slightly. - Combine and Serve:
Return chicken to the pan, spoon sauce over the top, and let simmer for 1β2 minutes. Serve hot.
