Ingredients
1 tbsp olive oil
8 oz sliced mushrooms
2 cloves fresh garlic, minced
2 cups fresh spinach
1/2 cup heavy whipping cream
1/4 cup grated parmesan cheese
1 package (about 20 oz) refrigerated cheese tortellini
Salt and black pepper, to taste
Directions
- Sauté Veggies: Heat olive oil in a large skillet over medium heat. Add mushrooms and cook 4–5 minutes until browned. Stir in garlic and cook 30 seconds.
- Add Tortellini & Cream: Stir in tortellini, cream, and 1/4 cup water. Simmer uncovered for 5–6 minutes, stirring occasionally.
- Finish Sauce: Add spinach and parmesan. Stir until spinach wilts and sauce thickens slightly.
- Season & Serve: Season with salt and pepper to taste. Serve hot!
