Ingredients
1 lb boneless skinless chicken breasts or thighs
1 tablespoon olive oil
4 cloves fresh garlic, minced
1 cup heavy whipping cream
½ cup grated parmesan cheese
Salt and black pepper, to taste
2 cups potatoes, cut into wedges
1 tablespoon olive oil (for potatoes)
1 cup broccoli florets
1 cup carrots, sliced
1 teaspoon garlic powder (for potatoes/veggies)
Directions
- Roast Potatoes & Veggies: Preheat oven to 400°F. Toss potatoes, broccoli, and carrots with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25–30 min.
- Cook Chicken: In a skillet, heat olive oil over medium heat. Season chicken with salt and pepper, then cook 5–7 minutes per side until golden and cooked through. Remove and set aside.
- Make Cream Sauce: In the same skillet, sauté garlic until fragrant. Add heavy cream and parmesan, simmer until thickened (3–5 min).
- Combine: Return chicken to skillet, spoon sauce over. Serve with roasted potatoes and veggies.
