Ingredients
2 boneless, skinless chicken breasts (sliced into thin strips)
OR 12 oz steak (flank, skirt, or sirloin, sliced against the grain)
OR 12 oz shrimp (peeled and deveined)1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 white or yellow onion, sliced
2 tbsp olive oil
1 packet of My Favorite Fajita Seasoning
8 small My Favorite Tortillas
1 cup shredded Mexican Cheese Blend
Sour cream, salsa, or guacamole (optional)
Directions
- Marinate the Protein
In a bowl, mix olive oil and My Favorite Fajita Seasoning.
Add your chicken, steak, or shrimp, tossing to coat.
Let marinate for 15-30 minutes (optional, but enhances flavor). - Cook the Protein
Heat a large skillet over medium-high heat.
Add the chicken or steak, cooking for 5-7 minutes until fully cooked and slightly charred. (For steak, cook to desired doneness and slice after resting.)
If using shrimp, cook for 2-3 minutes per side until pink and opaque.
Remove and set aside. - Sauté the Peppers & Onions
In the same skillet, add more olive oil if needed.
Toss in the sliced bell peppers and onions, cooking for 4-5 minutes until slightly softened but still crisp. - Assemble the Fajitas
Warm My Favorite Tortillas in a dry pan or microwave.
Fill each tortilla with your protein of choice, sautéed veggies, and a generous sprinkle of shredded Mexican cheese blend. - Serve & Enjoy!
Serve hot with sour cream, salsa, or guacamole on the side.
Squeeze fresh lime juice on top for extra zest!
