Ingredients
4 large red bell peppers, halved and seeded
1 lb boneless skinless chicken breasts, chopped
1 tbsp fresh garlic, minced
1 cup cooked white rice
1/2 cup sliced bell peppers mixed red, yellow, green
1/2 onion, sliced
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1/2 tsp chili powder
Salt and pepper, to taste
Optional: Mexican cheese blend or chopped cilantro for topping
Directions
- Prep Peppers: Preheat oven to 375°F. Slice bell peppers in half and remove seeds. Place in a baking dish, cut side up.
- Cook Chicken: Heat olive oil in a skillet over medium heat. Add chicken breasts and cook until done and cooked through, 6–7 minutes.
- Add Veggies: Stir in garlic, onions, and mixed bell peppers. Sauté until tender, about 4–5 minutes.
- Season & Mix: Add cooked rice, garlic powder, onion powder, chili powder, salt, and pepper. Stir until well combined.
- Stuff & Bake: Fill each pepper half with the chicken fajita mixture. Top with shredded cheese if using.
- Roast: Cover with foil and bake for 25 minutes. Uncover and bake 10 more minutes until peppers are tender and tops slightly golden.
