  • Cook Filling: In a skillet, heat olive oil, sautΓ© onion and garlic until soft. Add shredded chicken, half the enchilada sauce, and half the cheese. Stir to combine.
  • Assemble: Fill tortillas with chicken mixture, roll, and place seam-side down in a baking pan.
  • Top & Bake: Pour remaining sauce over enchiladas, sprinkle with remaining cheese. Bake at 375Β°F for 20 minutes until bubbly and golden.
  • Serve: Garnish with cilantro and serve hot.
