Ingredients
3 cups cooked pork shoulder, shredded
1/2 cup BBQ sauce
8 oz tortilla chips
1 1/2 cups shredded cheddar cheese
1/4 cup sour cream
1/4 cup black beans, drained and rinsed
1/4 cup can corn, drained
1/4 cup sliced black olives
Optional: sliced jalapeños, red onion, green onion, or chopped tomato
Directions
- Preheat Oven:
Set oven to 400°F. Line a baking sheet with parchment paper. - Assemble Nachos:
Spread tortilla chips in an even layer. Top with pulled pork, BBQ sauce, cheddar cheese, black beans, corn, and olives. - Bake:
Bake for 7–9 minutes or until cheese is melted and bubbly. - Finish and Serve:
Remove from oven. Drizzle with sour cream and add any fresh toppings. Serve immediately.
