Ingredients
1 lb ground beef (85/15)
1 cup diced tomatoes (canned or fresh)
½ cup bell peppers, chopped
¼ cup onion, diced
1 tablespoon tomato paste
1 tablespoon olive oil
1 tablespoon chili powder
1 teaspoon cumin
Salt and pepper (to taste)
Shredded cheese & green onions (for topping)
Directions
- Cook Beef: Heat oil, cook beef in skillet until browned. Drain excess fat.
- Add Veggies: Stir in onion and bell pepper, cook 3 mins.
- Simmer: Add tomatoes, paste, spices. Simmer 15 mins until thick.
- Serve: Spoon into bowls, top with cheese and green onions.
