Ingredients
2Â large eggs
Salt and black pepper, to taste
1 tbsp olive oil or butter (for cooking)
1/2 cup fresh spinach, chopped
1/4 cup shredded cheese (cheddar, feta, or your favorite blend)
1 tbsp diced onions (optional)
Directions
- Whisk the Eggs
In a small bowl, whisk together the eggs, milk, salt, and black pepper until fully combined. - Sauté the Spinach
Heat a nonstick skillet over medium heat and add olive oil or butter.
Sauté the spinach (and onions, if using) for 1-2 minutes until softened. - Cook the Omelette
Reduce heat to low and pour the egg mixture evenly over the spinach.
Let it cook undisturbed for about 2-3 minutes, until the edges start to set. - Add the Cheese & Fold
Sprinkle the shredded cheese over one half of the omelette.
Carefully fold the other half over the filling and let cook for another 1-2 minutes until the cheese melts. - Serve & Enjoy!
Slide the omelette onto a plate and top with additional cheese, sliced avocado, or your favorite hot sauce.
