Ingredients
1 cup oat flour (or blended oats)
1 scoop (30g) vanilla protein powder (or unflavored)
1 tsp baking powder
1/2 tsp cinnamon
1/4 tsp salt
1 large egg
1/2 cup unsweetened almond milk (or milk of choice)
1 tsp vanilla extract
1 tbsp olive oil (for cooking)

1 tbsp maple syrup (optional)
1 tbsp almond butter or peanut butter (optional)

Directions
- Mix the Dry Ingredients
In a mixing bowl, whisk together oat flour, protein powder, baking powder, cinnamon, and salt until well combined. - Add the Wet Ingredients
In a separate bowl, whisk together egg, almond milk, and vanilla extract.
Gradually pour the wet ingredients into the dry mixture, stirring until smooth. - Cook the Pancakes
Heat a nonstick skillet or griddle over medium heat and lightly coat with olive oil.
Pour about ¼ cup of batter onto the skillet for each pancake.
Cook for 2-3 minutes until bubbles form on the surface, then flip and cook for another 1-2 minutes until golden brown. - Serve & Enjoy!
Stack the pancakes on a plate and top with maple syrup, nut butter, or fresh berries as desired.
