  • Make the Cinnamon Swirl: In a small bowl, mix melted butter, brown sugar, and cinnamon. Transfer to a piping bag or a small ziplock bag with a corner cut off.
  • Prepare the Pancake Batter: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk milk, eggs, melted butter, and vanilla. Combine wet and dry ingredients, stirring until just mixed (don’t overmix!).
  • Cook the Pancakes: Heat a non-stick skillet over medium-low heat. Pour about ¼ cup of batter onto the pan. Immediately pipe a swirl of cinnamon filling onto the pancake.
  • Flip & Finish Cooking: When bubbles appear on the surface, carefully flip the pancake and cook for another 1-2 minutes until golden brown.
  • Make the Glaze: In a small bowl, mix powdered sugar, milk, and vanilla until smooth.
  • Serve & Enjoy: Drizzle warm pancakes with vanilla glaze and serve immediately!

Notes

  • For extra fluffiness, use buttermilk instead of regular milk—it makes the pancakes even softer!
    Don’t overmix the batter! A few lumps are fine; overmixing makes pancakes dense.
    Cinnamon swirl tip: If the swirl mixture gets too thick, warm it slightly to make it easier to pipe.
    Make it high-protein! Add a scoop of vanilla protein powder to the pancake batter for an extra protein boost.
    Want a shortcut? Use store-bought pancake mix and just add the cinnamon swirl and glaze for a faster version.
