¼ cup unsalted butter, melted
¼ cup brown sugar
1 tsp cinnamon
- For the Vanilla Glaze:
½ cup powdered sugar
1 tbsp milk
½ tsp vanilla extract
Directions
- Make the Cinnamon Swirl: In a small bowl, mix melted butter, brown sugar, and cinnamon. Transfer to a piping bag or a small ziplock bag with a corner cut off.
- Prepare the Pancake Batter: In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk milk, eggs, melted butter, and vanilla. Combine wet and dry ingredients, stirring until just mixed (don’t overmix!).
- Cook the Pancakes: Heat a non-stick skillet over medium-low heat. Pour about ¼ cup of batter onto the pan. Immediately pipe a swirl of cinnamon filling onto the pancake.
- Flip & Finish Cooking: When bubbles appear on the surface, carefully flip the pancake and cook for another 1-2 minutes until golden brown.
