Ingredients
1 lb ground beef
1/2 cup onion, diced
1/2 bell pepper, diced
2 cloves fresh garlic, minced
1 tbsp olive oil
1 can (14 oz) diced tomatoes
1 cup white rice, uncooked
1 cup black beans, drained and rinsed
1 cup can corn, drained
1/2 cup salsa
1½ cups chicken or beef broth
1/2 cup shredded cheddar cheese
1/2 cup Mexican cheese blend
Salt and black pepper, to taste
Directions
- Cook the Beef: In a large skillet, brown ground beef with onion over medium heat. Drain grease.
- Add Seasoning: Stir in garlic powder, chili powder, cumin, salt, and pepper. Cook for 1 minute.
- Add the Base: Add rice, black beans, corn, salsa, and broth. Stir to combine.
- Simmer: Cover and simmer on low for 15–18 minutes, or until rice is cooked and liquid is absorbed.
- Top with Cheese: Sprinkle both cheeses on top, cover, and let sit 2–3 minutes until melted.
- Serve: Spoon into bowls and garnish as desired.
