Ingredients
1 lb ground beef
1/2 cup onion, diced
2 cloves fresh garlic, minced
1 tsp Italian seasoning (or your favorite blend)
1/2 tsp paprika
1 can (14 oz) diced tomatoes
3 tbsp tomato paste
4 cups chicken or beef broth
6 lasagna noodles, broken into chunks
1/2 cup grated parmesan cheese
Salt and pepper, to taste
- For Garlic Bread Croutons:
2 slices Texas toast or thick bread
1 tbsp butter
1/2 tsp garlic powder
Directions
- Cook Beef: In a large pot, brown the ground beef with onion. Add garlic, Italian seasoning, and paprika.
- Add Tomato Base: Stir in tomato paste, diced tomatoes, broth, and bring to a boil.
- Simmer Pasta: Add broken lasagna noodles and simmer 12β15 minutes, until noodles are tender.
- Finish: Stir in mozzarella and parmesan cheese. Simmer until melted.
- Make Croutons: Toast buttered bread in a skillet with garlic powder until golden. Cut into cubes.
- Serve: Ladle soup into bowls and top with garlic bread croutons.
