Ingredients
1 box (8.5 oz) cornbread mix
1 egg
1/3 cup milk
1 can creamed corn
1Β½ cups shredded cheddar cheese, divided
2 cups cooked, shredded chicken
1/2 cup salsa or enchilada sauce
1/4 tsp cumin
1/4 tsp chili powder
Salt and pepper, to taste
Directions
- Make the Cornbread Base: Preheat oven to 400Β°F. In a bowl, mix cornbread mix, egg, milk, and creamed corn. Stir in 1/2 cup cheddar.
- Bake Base: Pour mixture into a greased 9x9 baking dish. Bake for 15β18 minutes until mostly set.
- Add Chicken Topping: In a bowl, combine shredded chicken, salsa or enchilada sauce, cumin, chili powder, and a pinch of salt and pepper.
- Assemble & Finish: Poke holes into the cornbread with a fork. Spread chicken mixture on top and sprinkle with remaining cheese.
- Serve: Season to taste and serve hot.
