  • Make the Cornbread Base: Preheat oven to 400Β°F. In a bowl, mix cornbread mix, egg, milk, and creamed corn. Stir in 1/2 cup cheddar.
  • Bake Base: Pour mixture into a greased 9x9 baking dish. Bake for 15–18 minutes until mostly set.
  • Add Chicken Topping: In a bowl, combine shredded chicken, salsa or enchilada sauce, cumin, chili powder, and a pinch of salt and pepper.
