Ingredients
2 cups cooked shredded boneless skinless chicken breasts
1 cup shredded cheddar cheese
1 can red enchilada sauce
or try our Homemade Hatch Red Chili1 tablespoon olive oil
Β½ onion, diced onion
2 cloves fresh garlic, minced
Optional: fresh cilantro for garnish
Directions
- Cook Filling: In a skillet, heat olive oil, sautΓ© onion and garlic until soft. Add shredded chicken, half the enchilada sauce, and half the cheese. Stir to combine.
- Assemble: Fill tortillas with chicken mixture, roll, and place seam-side down in a baking pan.
- Top & Bake: Pour remaining sauce over enchiladas, sprinkle with remaining cheese. Bake at 375Β°F for 20 minutes until bubbly and golden.
- Serve: Garnish with cilantro and serve hot.
