Ingredients
1 lb boneless skinless chicken breasts, diced
2 tbsp olive oil
2 tsp Cajun seasoning
12 oz penne or fettuccini
2 tbsp butter
2 cloves fresh garlic, minced
1½ cups heavy cream
1 cup grated parmesan cheese
Salt and black pepper, to taste
Directions
- Cook Pasta: Boil pasta in salted water until al dente. Drain and set aside.
- Cook Chicken: Dice the boneless skinless chicken breasts, season with Cajun seasoning, and sear in olive oil over medium heat until golden and cooked through. Remove and set aside.
- Make Sauce: In the same skillet, melt butter. Add garlic and sauté 1 minute. Stir in heavy cream and simmer for 2–3 minutes.
- Add Cheese: Stir in parmesan and mozzarella. Season with salt and pepper. Simmer until smooth.
- Combine: Add cooked pasta and chicken to the sauce. Toss to coat.
- Bake: Pour mixture into a greased baking pan. Top with extra cheese if desired. Bake at 375°F for 20–25 minutes until bubbly and golden.
