Ingredients
1 lb ground beef
1/2 cup onion, diced
2 cloves fresh garlic, minced
1 can (10 oz) red enchilada sauce (or make your own Hatch Red Chili)
1/2 cup sour cream
2 cups shredded cheddar cheese, divided
8 oz penne pasta
Salt and pepper, to taste
Directions
- Cook Pasta: Boil pasta in salted water until al dente. Drain and set aside.
- Cook Beef: In a skillet, brown ground beef with onion and garlic. Drain excess grease.
- Combine: Stir in enchilada sauce, sour cream, 1½ cups cheddar, and cooked pasta. Mix well and season to taste.
- Bake: Pour mixture into a greased baking dish. Top with remaining cheese.
- Finish: Bake at 375°F for 15–20 minutes or until bubbly and melted.
