Ingredients
4 chicken breasts, halved lengthwise
8 slices bacon
4 oz cream cheese, softened
1–2 jalapeños, finely diced
1/2 tsp garlic powder
Salt and pepper, to taste
Toothpicks or bamboo skewers
Directions
- Prep the Filling: In a bowl, mix cream cheese, diced jalapeños, garlic powder, salt, and pepper.
- Stuff the Chicken: Slice each chicken breast lengthwise to create a pocket (don’t cut all the way through). Fill with the cream cheese mixture.
- Wrap with Bacon: Wrap each piece of stuffed chicken with 1–2 slices of bacon. Secure with bamboo skewers.
- Bake: Place on a foil-lined baking sheet and bake at 400°F for 25–30 minutes, or until chicken is cooked through and bacon is crispy. Broil the last 2–3 minutes if needed for extra crisp.
