Ingredients
1 tbsp olive oil
3 tbsp butter
4 tsp fresh garlic (cloves), minced
1/2 tsp onion powder
Salt and pepper to taste
4 cups fresh spinach
1/2 cup heavy cream
1/4 cup grated Parmesan cheese
Optional: pinch of cayenne or red pepper flakes
Directions
- Sear the Chicken:
Season chicken with salt, pepper, and onion powder. Heat olive oil in a skillet over medium-high. Sear chicken 5–6 minutes per side or until cooked through. Remove and set aside. - Make the Garlic Butter Sauce:
Lower heat to medium. Add butter and garlic to the same pan. Sauté for 1 minute until fragrant. - Cream the Spinach:
Stir in heavy cream and Parmesan. Add spinach and cook 2–3 minutes until wilted and the sauce thickens slightly. - Combine and Serve:
Return chicken to the pan and spoon creamed spinach and sauce over top. Serve hot.
