Ingredients
1 cup dry lentils (or 2 ½ cups cooked)
1 tbsp olive oil
1 small onion, diced
1 bell pepper, diced
2 cloves garlic, minced
1 cup tomato sauce
2 tbsp tomato paste
1 tbsp maple syrup
1 tbsp mustard
1 tbsp soy sauce
½ tsp smoked paprika
Salt and pepper to taste
Burger buns (for serving)

Directions
- Cook Lentils: Cook lentils according to package directions. Drain and set aside.
- Sauté Veggies: In a skillet, heat olive oil. Sauté onion and bell pepper until soft, about 5 minutes. Add garlic and cook 1 minute.
- Combine: Add tomato sauce, tomato paste, maple syrup, mustard, soy sauce, paprika, salt, and pepper. Stir well.
- Simmer: Add cooked lentils to the skillet. Simmer for 5–10 minutes until thickened.
